Slow Cooker Freezer Friendly Spanish Rice

Slow cooker recipes are my favorite because you can throw everything in at once and pretty much forget about it.  When you are busy that equals fabulous!   I love foods with a little bit of spice  to them.  A family favorite is sausage and tomatoes. Yum!   I love trying new foods with sausage like this crowd pleasing sausage stew or this delicious slow cooker stuffed pepper soup.   These will both make your house smell so tasty and they do taste great too.  Today I'm going to share with you how to make a Spanish rice in your slow cooker and guess what it has sausage as the main ingredient. It is super easy to throw together but you do use more than your slow cooker.

We've been really sick and things are totally off of schedule.  I hate it when things get topsy turvy upside down . The great thing about this meal is it can totally be a freezer crock pot meal that you just  pull out and toss in when your in a rush. You can cook it and freeze it or you can just throw the ingredients in a zip lock bag and freeze them then toss them in your crock pot on a busy morning. We love freezer friendly meals around here.

Slow Cooker Spanish Rice

What You Need:

  • Nettles Sausage 3-4 links
  • canned Stewed tomatoes (28 ounce)
  • 1/2 can of water
  • 1 sliced bell pepper
  • 1 sliced onion
  • 1/4 tsp chili powder 
  • 2 cups cooked white rice 
  • salt and pepper

What do you do? 

In your slow cooker add your sausage cut into chunks, tomatoes, bell pepper, onion, chili powder , water and let it cook on low for 4 hours.  Add your un -cooked rice to a pot of salted water and cook on stove. Drain when it is done.  Add to your slow cooker about 30 minutes before you are ready to eat.  This will keep your rice from getting mushy. 

Tips:  You can use frozen rice.  You can use leftover rice.  Use gallon size freezer bags to freeze.
