Simple Tuna Salad Recipe #Whats4Lunch

Already having the lunch box blues. Wondering what you can take to lunch this week. What if I told you there was a budget friendly coming to the blog today? Would you be interested?   That would get me heading over to visit . I have the hardest time adding variety to our lunches. One thing that causes a problem is all of the picky pants in this house. I try to mix up the week between left overs from dinner and something new from my kitchen.  This recipe works well with that plan.

Today we are sharing a simple tuna salad recipe that will cure those whats for lunch  blues. This recipe is budget friendly and makes enough for several lunches.  You can change it up from salad to sub in minutes or eat it with crackers to give some variety during the week.

What you Need:

  • 1 can of white tuna
  • 2-3 boiled eggs
  • 1 TB spicy mustard
  • 1/4 cup of mayonnaise
  • 2 cups of boiled/salted macaroni noodles
  • 1/3 cup of sweet relish
  • spinach leaves (optional)
  • small mixing bowl
Drain Tuna fish. Boil your eggs, then peel them and dice them up and add to your tuna fish. Add the rest of the ingredients except for the spinach.. Sprinkle with salt and black pepper and give a good stir or toss around.  Serve on a bed of spinach, on sandwich roll or eat with crackers.
