Chicken Alfredo Pasta Bake Recipe

Quick and easy family meals that is definitely what I am about these days.  Restocking my freezer with freezer meals is definitely on the top of my to do list when the kids visit their Dad again.  I am tired and on the run friends and having meals to grab out of the freezer really makes life simpler.  I am also going to be making and preparing pear sauce, and baked pears.  They are so good over cream cheese croissants I'm thinking of another recipe to share friends.  Today we are going to share a really easy and healthy chicken Alfredo pasta bake.   From start to finish this recipe takes about 45 minutes, however make a double batch because this one is Awesomely Freezable!

What you Need for the Pasta Bake:

  • 2 cups of shredded boiled chicken (I use my mixer to do the shredding)
  • 2 cups of California blend mixed vegetables frozen ( broccoli , carrots , cauliflower)
  • salt and pepper
  • 1/2 of a box of Penne pasta boiled
What you need For the Sauce: 
  • 1 stick of butter
  • 1 teaspoon crushed minced garlic , or 2 cloves fresh minced garlic
  • 2 cups of heavy cream
  • 1/2 cup Parmesan cheese (I use shredded)
  • salt and pepper
What you Need to do

  • For the sauce you will first melt some butter into your pan.  
  • Add in your garlic, cream , salt and pepper stirring slowly.  When the sauce begins to bubble add in your cheese stirring constantly until it has completely melted.  
  • Boil your pasta and then strain it. 
  • Add your pasta, chicken and vegetables to the sauce and stir it up well.
  • Pour into a casserole pan and spread evenly along the pan. Sprinkle with salt and pepper. 
  • Bake at 350 for 20-30 minutes. 

To Freeze It: 

You can pour all ingredients prior to baking into a zip lock gallon freezer bag. Just label the bag with a marker on time to cook and directions.  Or you can pour the ingredients into an aluminum foil casserole pan and wrap with tin foil. Then just write with a sharpie directions/label on the foil prior to freezing.  When you are ready to cook just bake as directed above.
