Slow Cooker Stickin' Chicken

February already.. Can you guys believe that.  I know I am always trying to find something the family will enjoy for dinner and that is fairly easy and budget friendly.  We have an easy slow cooker recipe that fits that description today. Stickin' Chicken is a recipe that has peanut butter in it so if you have someone that has peanut allergy of course this won't work for you. (sorry about that).  My daughter had to stay away from foods with nuts for a brief period when she was younger and I thought she'd go nuts before her allergy testing came back to tell us she was not allergic. Boy was she happy about that.  Anyway so if you can't have foods with nuts this one isn't for you.  You might like some of our other slow cooker recipes though . We have several like our homemade vegetable beef soup, or slow cooker stuffed peppers.  

Slow Cooker Stickin' Chicken Recipe

Ingredients:



  • 1/4 cup peanut butter (I used creamy)
  • 5-6 Tbsp Soy Sauce
  • 1/4 tsp garlic salt 
  • 1/4 tsp cayenne pepper
  • salt and pepper 
  • chicken (boiled and shredded) 
First, boil your chicken. You can do this ahead of time if you want also in the slow cooker. Just cover your chicken with water and let cook for 4 hours on high. Then let cool and shred it.  

Next, in your slow cooker add peanut butter, soy sauce, seasoning and chicken.  Give a good stir.  It will look something like this...

 photo stickinchicken2.jpg  It is very thick and clumpy.  When it cooks the peanut butter becomes more liquid like creating a thick sauce like consistency.

I boiled whole wheat bow ties and served my stickin' chicken over that.  You could also do it over rice for something different.

I like this recipe because it is easy to put together last minute and without going to the store. I usually always have peanut butter in the pantry and chicken in the freezer.  This recipe is also freezable. Just throw all your ingredients in a zip lock bag and put in the freezer until you are ready to prepare in the crock pot.  Works great for once a month freezer cooking.
