Slow Cooker Stuffed Pepper Soup Recipe

It's January and them winter storms seem to be hitting us hard.  The perfect time to put on a big pot or slow cooker of soup.    Dad and I love stuffed peppers.  I even have a recipe for slow cooker stuffed peppers you might want to give a try.  This soup has all of the flavors and smells of a stuffed pepper.  It is super budget friendly , tasty and easy.

This recipe is adapted from Stuffed Pepper Soup over at Six Sisters Stuff.  If you haven't discovered them you totally want to. The recipes are amazing amazing and they are great at video.  Definitely one of my favorite blogs.  

Slow Cooker Stuffed Pepper Soup Recipe

  Ingredients you will need: 

  • one pound of Italian sausage browned 
  • one yellow onion diced
  • 2 green bell peppers diced
  • 3 cups of beef broth 
  • 1-2 cups of cooked white rice 
  • 2 - 15 ounce cans of diced tomatoes 
  • salt and pepper I give it a good sprinkle
  • 2 cloves garlic optional (I actually left this out the other day and it was still great) 

Steps to Make Soup: 

  1. brown your Italian sausage and drain off the excess grease.  Add it to your slow cooker. 
  2. Cook and drain 2 cups of white rice. *** Here is a Mom Tip: use left over rice from a meal earlier in the week . Just plan ahead and save your 2 cups out.  Or if you have left over rice bag it in a freezer bag and freeze for when you make this soup or another recipe that requires cooked rice.  ***
  3. Open and add your 2 -15 ounce cans of diced tomatoes 
  4. Add 3 cups of beef broth to the slow cooker 
  5. dice your onion, and green pepper adding it to the slow cooker. 
  6. Add your salt, pepper and garlic and give a good stir. Mixing your ingredients well. 
  7. Cover and cook on high 4 hours or low 6 hours.  
I just love my slow cooker. Cover it up , come back and you have a hearty family friendly meal.  Easy Peasy.  It's so good.  I love this with hot bread. Or cheesy pull apart bread.  The kids like the cheesy bread ;) Any hot bread is good to me.
