Pizza Quesadilla #Recipe

Finding cheap and easy recipes to feed a house full of kids is not always easy.  My kids all eat very differently. Throw their friends into the mix and you may never find a food that will feed the crowd. One crowd pleaser is always pizza.  Pizza quesadillas remind me of a pizza grilled cheese or hot pocket but with tortilla shells.

Pizza Quesadilla Recipe

  • tortilla shells 
  • one can of tomato sauce
  • 2 Tablespoons of sugar
  • pepperoni 
  • mozzarella cheese
  • diced veggies (optional) 
  • hot skillet
  • Pam cooking spray 

Directions: 


  1. Lay out your ingredients and organize yourself
  2. Heat your skillet and spray it lightly with cooking spray
  3. lightly spray or butter your tortillas
  4. take one tortilla and spread a tablespoon of canned tomato sauce over it (may take less you can eyeball it to see what looks good to you and add more or  less)
  5. Sprinkle with a pinch of sugar
  6. cover with cheese, veggies and pepperoni
  7. Place 2nd tortilla over this mix 
  8. Put it in the pan and cook each side pressing down firmly with your spatula to flatten it 
  9. Cook each side 3-4 minutes until your cheese has melted
  10. Cut into triangles and serve 
These are great for kids because one can have cheese, one can have pepperoni etc.  The only thing I'm not crazy about is you have to make one at a time (or I do).  What I love about them is the fact that they are really super cheap to make.  They are also great for lunches and do well in lunchboxes.
