#MealPlanMonday Menu & Freezable Breakfast Muffin #Recipe

Here is what's cooking at the zoo this week.  I don't know about your zoo but at ours the animals are always STARVING!  

This weeks Meal plan:

10. Homemade Pizza night
11.  BBQ Crock Pot ribs / Mac and cheese / Baked Beans
12.  No Peek Beef tips Over egg noodles/ Broccoli/ Mac and Cheese
13.  Chef salads/ sandwiches
14.  Chicken Fajitas (freezer meal make extra batch)
15.  Chicken Fajita Casserole (use meat from 9/14)
16.    Homemade Veggie soup/ sandwiches

FREEZABLE BREAKFAST Muffins Recipe

So, this recipe is really easy to do and freezable. Just pop a muffin out and microwave it for 30 seconds to a minute and you are good to go.  It is also a very flexible recipe. If you don't like something you can substitute/ leave out/ or add in and it will be just fine!

For this muffin I used sausage , eggs, shredded hash brown potatoes (frozen), and cheese.

You need a muffin tin . Turn your oven to 350 degrees F to preheat.

Grease your muffin tin or spray it with cooking spray.

Add shredded hash browns to bottom.  Put them in the oven and let them bake for a couple of minutes.  (2-5)

Brown your sausage , scramble 4 eggs  with milk , salt and pepper.  Then add to sausage and add  in cheese. Pour over the shredded has browns and return to oven to bake.  Bake for 15-25 minutes until your egg is set and remove.

Cool / Eat /Freeze

To freeze them simply allow to cool and place in a labeled gallon zip lock bag. You can then pull one to two out as you like for breakfast.

Substitutes:
Crumble bacon instead of sausage
Add in Veggies like onion /bell pepper/mushrooms/ Whatever maker mini omelet muffins.
